Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 medium cucumber, diced
  • 1 pint cherry tomatoes, halved
  • ½ medium red onion, thinly sliced
  • ½ cup pitted Kalamata olives, sliced
  • ½ cup crumbled feta cheese
  • ¼ cup fresh parsley, chopped
  • ¼ cup fresh mint, chopped
  • Juice of 1 lemon (about 2 tbsp)
  • ¼ cup extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water until clear. In a pot, combine quinoa and water; bring to a boil.
  2. Reduce heat to low, cover, and simmer for about 15 minutes until water is absorbed and quinoa is fluffy.
  3. While quinoa cooks, chop cucumber, halve cherry tomatoes, slice red onion, and pit olives.
  4. In a large bowl, combine cooked quinoa with vegetables, feta cheese, parsley, and mint.
  5. Drizzle olive oil and lemon juice over the mixture; season with salt and pepper. Toss gently to combine.
  6. Serve chilled or at room temperature.
