Ingredients
- 1 cup quinoa
- 2 cups water
- 1 medium cucumber, diced
- 1 pint cherry tomatoes, halved
- ½ medium red onion, thinly sliced
- ½ cup pitted Kalamata olives, sliced
- ½ cup crumbled feta cheese
- ¼ cup fresh parsley, chopped
- ¼ cup fresh mint, chopped
- Juice of 1 lemon (about 2 tbsp)
- ¼ cup extra virgin olive oil
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water until clear. In a pot, combine quinoa and water; bring to a boil.
- Reduce heat to low, cover, and simmer for about 15 minutes until water is absorbed and quinoa is fluffy.
- While quinoa cooks, chop cucumber, halve cherry tomatoes, slice red onion, and pit olives.
- In a large bowl, combine cooked quinoa with vegetables, feta cheese, parsley, and mint.
- Drizzle olive oil and lemon juice over the mixture; season with salt and pepper. Toss gently to combine.
