  • 3 lbs chuck roast
  • 4 dried guajillo peppers
  • 1 large onion, chopped
  • 6 cloves garlic, minced
  • 2 tsp cumin
  • 4 cups low-sodium beef broth
  • 2 bay leaves
  • Salt and pepper to taste
  • Corn tortillas

Instructions

  1. Cut the chuck roast into chunks and season generously with salt and pepper. Sear the meat in a pot over medium-high heat until browned on all sides.
  2. Boil water in a separate pot, remove from heat, and soak guajillo peppers until soft (about 10 minutes). Blend soaked peppers into a smooth paste.
  3. In the same pot used for searing, sauté onion and garlic until fragrant.
  4. Return the meat to the pot along with cumin, bay leaves, beef broth, and guajillo paste. Stir well.
  5. Cover and simmer on low heat for 8 hours until tender.
  6. Shred the beef using two forks, serve on warm corn tortillas with consomé.
