- 4 dried guajillo peppers
- 1 large onion, chopped
- 6 cloves garlic, minced
- 2 tsp cumin
- 4 cups low-sodium beef broth
- 2 bay leaves

- Corn tortillas
Instructions
- Cut the chuck roast into chunks and season generously with salt and pepper. Sear the meat in a pot over medium-high heat until browned on all sides.
- Boil water in a separate pot, remove from heat, and soak guajillo peppers until soft (about 10 minutes). Blend soaked peppers into a smooth paste.
- In the same pot used for searing, sauté onion and garlic until fragrant.
- Return the meat to the pot along with cumin, bay leaves, beef broth, and guajillo paste. Stir well.
- Cover and simmer on low heat for 8 hours until tender.
- Shred the beef using two forks, serve on warm corn tortillas with consomé.
