  • 6 hard-boiled eggs
  • 1/4 cup mayonnaise
  • 1 tsp Dijon mustard
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp smoked paprika (plus extra for garnish)
  • Sliced black olives or green peas (for decoration)

Instructions

  1. Boil the eggs by placing them in a saucepan covered with cold water. Bring to a boil, cover, turn off the heat, and let sit for 12 minutes. Cool in ice water.
  2. Peel the cooled eggs under running water to avoid cracks. Slice each egg in half lengthwise and scoop out yolks into a bowl.
  3. Mash yolks with mayonnaise, Dijon mustard, salt, pepper, and smoked paprika until smooth.
  4. Fill each egg white half with the yolk mixture using a piping bag or spoon to create peaks.
  5. Decorate with olive slices or peas as eyes and sprinkle with paprika.
  6. Chill for at least 30 minutes before serving.
