Description

Enjoy bite-sized banana bread treats that are fluffy, flavorful, and perfect for any occasion. Quick to make and even quicker to disappear!


Ingredients

  • 3 ripe bananas
  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • 1 teaspoon baking soda
  • 2 large eggs
  • ½ cup unsalted butter (melted)
  • 1 teaspoon vanilla extract
  • Optional: chocolate chips or nuts

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a mini muffin tin with liners or nonstick spray.
  2. In a mixing bowl, mash the ripe bananas until smooth.
  3. In another bowl, whisk together melted butter, sugar, eggs, and vanilla extract until well combined.
  4. In a separate bowl, mix flour and baking soda. Gradually fold into the wet ingredients until just combined.
  5. If desired, stir in chocolate chips or nuts for added flavor.
  6. Fill each muffin cup two-thirds full with batter and bake for 12-15 minutes or until golden brown.
  7. Cool slightly before transferring to a wire rack.
