- 3 ripe bananas
- 1 ½ cups all-purpose flour
- ½ cup granulated sugar
- 1 teaspoon baking soda
- 2 large eggs
- ½ cup unsalted butter (melted)
- 1 teaspoon vanilla extract
- Optional: chocolate chips or nuts
Instructions
- Preheat your oven to 350°F (175°C) and prepare a mini muffin tin with liners or nonstick spray.
- In a mixing bowl, mash the ripe bananas until smooth.
- In another bowl, whisk together melted butter, sugar, eggs, and vanilla extract until well combined.
- In a separate bowl, mix flour and baking soda. Gradually fold into the wet ingredients until just combined.
- If desired, stir in chocolate chips or nuts for added flavor.
- Fill each muffin cup two-thirds full with batter and bake for 12-15 minutes or until golden brown.
- Cool slightly before transferring to a wire rack.
