- 2 tbsp Dijon mustard
- Salt and pepper to taste
- 2 tbsp butter
Instructions
- Slice the beef against the grain, chop the onions, and slice the mushrooms.
- Cook the egg noodles in salted boiling water according to package instructions until al dente. Drain and set aside.
- In a large skillet over medium-high heat, melt the butter. Sear the beef strips in batches until browned; remove and let rest.
- In the same skillet, sauté onions until translucent, then add mushrooms and cook until golden brown.
- Sprinkle flour over the onion mixture and stir for about one minute. Gradually add beef broth while stirring until thickened. Stir in Dijon mustard.
- Return the beef to the skillet along with sour cream, mixing well to coat everything in sauce. Gently fold in cooked egg noodles before serving.
