  • 8 oz cremini mushrooms, sliced
  • 2 cups low-sodium beef broth
  • 1 cup sour cream
  • 2 tbsp flour
  • 2 tbsp Dijon mustard
  • Salt and pepper to taste
  • 2 tbsp butter

Instructions

  1. Slice the beef against the grain, chop the onions, and slice the mushrooms.
  2. Cook the egg noodles in salted boiling water according to package instructions until al dente. Drain and set aside.
  3. In a large skillet over medium-high heat, melt the butter. Sear the beef strips in batches until browned; remove and let rest.
  4. In the same skillet, sauté onions until translucent, then add mushrooms and cook until golden brown.
  5. Sprinkle flour over the onion mixture and stir for about one minute. Gradually add beef broth while stirring until thickened. Stir in Dijon mustard.
  6. Return the beef to the skillet along with sour cream, mixing well to coat everything in sauce. Gently fold in cooked egg noodles before serving.
