- 8 oz penne pasta
- 12 oz smoked Cajun sausage, sliced
- 1 medium onion, thinly sliced
- 1 cup bell peppers (mix of red and green), chopped
- 3 cloves garlic, minced
- 2 tbsp Cajun seasoning
- 1 cup low-sodium chicken broth
- 1 cup heavy cream
- 1/2 cup freshly grated Parmesan cheese
- 2 tbsp olive oil
Instructions
- Cook the penne pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet over medium heat, add olive oil. Sauté the onion and bell peppers until softened, about 5 minutes.
- Stir in garlic and sliced Cajun sausage; cook until the sausage is browned, about 4-5 minutes.
- Add Cajun seasoning and chicken broth; bring to a simmer. Then stir in heavy cream until well combined.
- Fold in the cooked pasta and let everything simmer together for an additional couple of minutes.
- Serve hot with freshly grated Parmesan on top.
