  • 1 lb lean ground beef
  • 8 oz rotini or penne pasta
  • 1 packet taco seasoning (or homemade)
  • 1 cup shredded sharp cheddar cheese
  • 4 oz cream cheese
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced (red preferred)
  • 1 cup beef broth or water
  • 2 tsp olive oil

Instructions

  1. Prep your ingredients by dicing the onion and bell pepper.
  2. In a large skillet over medium heat, heat the olive oil. Sauté the onion and garlic until fragrant and translucent.
  3. Increase the heat slightly and add the ground beef. Cook until browned, breaking it apart with a spatula.
  4. Stir in the taco seasoning and diced bell pepper; cook for an additional 2-3 minutes.
  5. Add beef broth (or water) and uncooked pasta to the skillet. Bring to a boil, then reduce heat and cover; simmer for about 10-12 minutes until pasta is al dente.
  6. Reduce heat further and mix in cream cheese and cheddar cheese until melted into a smooth sauce.
  7. Serve hot, garnished with fresh cilantro or avocado slices if desired.
