- 8 oz rotini or penne pasta
- 1 packet taco seasoning (or homemade)
- 1 cup shredded sharp cheddar cheese
- 4 oz cream cheese
- 1 can (14.5 oz) diced tomatoes with green chilies
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced (red preferred)
- 1 cup beef broth or water
- 2 tsp olive oil
Instructions
- Prep your ingredients by dicing the onion and bell pepper.
- In a large skillet over medium heat, heat the olive oil. Sauté the onion and garlic until fragrant and translucent.
- Increase the heat slightly and add the ground beef. Cook until browned, breaking it apart with a spatula.
- Stir in the taco seasoning and diced bell pepper; cook for an additional 2-3 minutes.
- Add beef broth (or water) and uncooked pasta to the skillet. Bring to a boil, then reduce heat and cover; simmer for about 10-12 minutes until pasta is al dente.
- Reduce heat further and mix in cream cheese and cheddar cheese until melted into a smooth sauce.
- Serve hot, garnished with fresh cilantro or avocado slices if desired.
