  • 1 lb fresh green beans, trimmed
  • 1 lb Yukon Gold potatoes, diced (about 3 medium potatoes)
  • 3 tbsp extra virgin olive oil
  • 1 tsp garlic powder
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried thyme

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Drizzle olive oil in a large baking dish.
  3. Season chicken breasts with salt, pepper, garlic powder, and thyme.
  4. Arrange the seasoned chicken in the baking dish and add the diced potatoes and green beans around it.
