- 1 lb Yukon Gold potatoes, diced (about 3 medium potatoes)
- 3 tbsp extra virgin olive oil
- 1 tsp garlic powder
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp dried thyme
Instructions
- Preheat your oven to 400°F (200°C).
- Drizzle olive oil in a large baking dish.
- Season chicken breasts with salt, pepper, garlic powder, and thyme.
- Arrange the seasoned chicken in the baking dish and add the diced potatoes and green beans around it.
- Toss everything gently to coat with olive oil and spices.
- Bake for 30-35 minutes or until the chicken reaches an internal temperature of 165°F (75°C) and the potatoes are fork-tender.
