Description

Chicken Hashbrown Casserole is a comforting blend of crispy hashbrowns and tender chicken, topped with melted cheese—perfect for family gatherings or brunch.


Ingredients

  • 4 cups frozen hashbrowns
  • 3 boneless skinless chicken breasts (diced)
  • 1 can (10.5 oz) cream of chicken soup
  • 2 cups shredded cheddar cheese
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 green onions (sliced for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C). Spray a 9×13-inch baking dish with nonstick cooking spray.
  2. In a skillet, cook diced chicken over medium heat until no longer pink, about 7-10 minutes.
  3. In a large bowl, mix cooked chicken with hashbrowns, cream of chicken soup, 1.5 cups cheese, onion powder, salt, and pepper until well combined.
  4. Pour the mixture into the prepared baking dish. Top with remaining cheese.
  5. Bake for 45-50 minutes until bubbly and golden brown. Let cool slightly before serving and garnish with green onions if desired.
