  • 2 lbs boneless, skinless chicken thighs
  • 2 poblano peppers, diced
  • 1 medium yellow onion, chopped
  • 4 cloves garlic, minced
  • 2 tbsp unsweetened cocoa powder
  • 1 cup diced tomatoes (fresh or canned)
  • 1 cup low-sodium chicken broth
  • 1 tsp ground cumin
  • 1 tsp ground cinnamon
  • 1 tsp sugar (adjust to taste)
  • 2 tbsp olive oil

Instructions

  1. Prepare your ingredients: chop the onions, mince the garlic, and dice the tomatoes.
  2. Heat olive oil in a large skillet over medium heat. Sauté onions until translucent (about 5 minutes), then add garlic and cook until fragrant.
  3. Stir in diced poblano peppers and sauté for an additional 5 minutes.
  4. Push veggies aside and sear chicken thighs until golden brown on both sides (approximately 6 minutes per side).
  5. Add tomatoes, cocoa powder, cumin, cinnamon, sugar, and chicken broth. Mix well.
  6. Lower the heat and simmer uncovered for about 30 minutes until the sauce thickens.
