- 2 poblano peppers, diced
- 1 medium yellow onion, chopped
- 4 cloves garlic, minced
- 2 tbsp unsweetened cocoa powder
- 1 cup diced tomatoes (fresh or canned)
- 1 cup low-sodium chicken broth
- 1 tsp ground cumin
- 1 tsp ground cinnamon
- 1 tsp sugar (adjust to taste)
- 2 tbsp olive oil
Instructions
- Prepare your ingredients: chop the onions, mince the garlic, and dice the tomatoes.
- Heat olive oil in a large skillet over medium heat. Sauté onions until translucent (about 5 minutes), then add garlic and cook until fragrant.
- Stir in diced poblano peppers and sauté for an additional 5 minutes.
- Push veggies aside and sear chicken thighs until golden brown on both sides (approximately 6 minutes per side).
- Add tomatoes, cocoa powder, cumin, cinnamon, sugar, and chicken broth. Mix well.
- Lower the heat and simmer uncovered for about 30 minutes until the sauce thickens.
