Ingredients

  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cups chopped crisp lettuce
  • 1 cup diced cucumber
  • ½ cup mayonnaise (or Greek yogurt)
  • 2 tbsp Dijon mustard
  • 4 large flour tortillas

Instructions

  1. Preheat grill or skillet over medium heat. Season chicken breasts with salt and pepper; cook for 6-7 minutes per side until fully cooked.
  2. Let chicken cool slightly, then shred using two forks.
  3. In a bowl, mix shredded chicken with mayonnaise, mustard, diced veggies, salt, and pepper until well combined.
  4. Lay a tortilla flat and add a generous scoop of the filling to the center. Fold in the sides and roll from bottom to top.
  5. Slice wraps diagonally and serve with fresh veggies on the side.
