- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 cloves fresh garlic, minced
- 1 medium yellow onion, diced
- 2 large carrots, chopped
- 2 celery stalks, chopped
- 6 cups low-sodium chicken broth
- 2 tsp fresh thyme, chopped
- 2 tsp fresh rosemary, chopped
- Salt and pepper to taste
- Juice of 1 lemon
Instructions
- Chop all vegetables and roughly chop the fresh herbs.
- In a large pot over medium heat, drizzle olive oil and sauté onions until translucent.
- Add carrots and celery; cook for about 5 minutes until slightly softened.
- Add chicken breasts and garlic; sauté for an additional couple of minutes.
- Pour in chicken broth to cover the ingredients; bring to a gentle boil.
- Reduce heat to simmer; add thyme and rosemary. Cook for about 30 minutes until the chicken is fully cooked.
- Remove chicken breasts, shred them using two forks, then return shredded chicken to the pot.
- Stir in lemon juice before serving.
