Ingredients

  • 1 pound boneless turkey breast
  • 1 cup long-grain rice (Basmati or Jasmine)
  • 4 cups low-sodium chicken broth
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 2 carrots, diced
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 1 cup frozen green peas (optional)

Instructions

  1. Sauté diced onion and minced garlic in a skillet over medium heat until translucent.
  2. Layer turkey breast at the bottom of your slow cooker. Top with sautéed onions, garlic, diced carrots, rice, thyme, salt, and pepper. Pour chicken broth over the top.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours until turkey is tender and easily shredded.
  4. If using peas, stir them in 30 minutes before serving to warm through.
  5. Shred turkey with forks and mix back into the rice mixture before serving.
