Description

Cottage Cheese Egg Bites are delightful, fluffy snacks packed with protein and flavor, perfect for breakfast or a quick, healthy treat any time of day.


Ingredients

  • 6 large eggs
  • 1 cup low-fat cottage cheese
  • 1 cup fresh spinach, chopped
  • ½ cup grated cheddar cheese
  • ½ tsp salt
  • ¼ tsp black pepper
  • Non-stick cooking spray

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Spray a muffin tin with non-stick cooking spray.
  3. In a large bowl, whisk together eggs and cottage cheese until smooth.
  4. Stir in chopped spinach, grated cheddar, salt, and pepper until well combined.
  5. Pour the mixture into the prepared muffin tin, filling each cup about three-quarters full.
  6. Bake for 20-25 minutes or until golden brown and firm to touch.
  7. Allow to cool slightly before removing from the tin.
