Instructions
- Preheat your oven to 350°F (175°C).
- Spray a muffin tin with non-stick cooking spray.
- In a large bowl, whisk together eggs and cottage cheese until smooth.
- Stir in chopped spinach, grated cheddar, salt, and pepper until well combined.
- Pour the mixture into the prepared muffin tin, filling each cup about three-quarters full.
- Bake for 20-25 minutes or until golden brown and firm to touch.
- Allow to cool slightly before removing from the tin.
