- 2–3 boneless, skinless chicken breasts
- 4 cups low-sodium chicken broth
- 1 cup heavy cream
- 1/2 cup Buffalo sauce
- 1 cup diced celery
- 1 cup diced carrots
- 3 cloves garlic, minced
- 1/4 cup chopped green onions for garnish
Instructions
- In a large pot, combine chicken breasts and chicken broth. Bring to a gentle boil, then simmer for about 20 minutes until the chicken is cooked through.
- Remove chicken from the pot and shred using two forks.
- In the same pot, add diced celery and carrots. Sauté over medium heat for about five minutes. Add minced garlic during the last minute.
