  • 23 boneless, skinless chicken breasts
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1/2 cup Buffalo sauce
  • 1 cup diced celery
  • 1 cup diced carrots
  • 3 cloves garlic, minced
  • 1/4 cup chopped green onions for garnish

Instructions

  1. In a large pot, combine chicken breasts and chicken broth. Bring to a gentle boil, then simmer for about 20 minutes until the chicken is cooked through.
  2. Remove chicken from the pot and shred using two forks.
  3. In the same pot, add diced celery and carrots. Sauté over medium heat for about five minutes. Add minced garlic during the last minute.
  4. Stir in heavy cream and Buffalo sauce; simmer for five minutes.
  5. Return shredded chicken to the pot and mix well until heated through.
  6. Ladle soup into bowls and top with chopped green onions. Enjoy warm!
