- 2 celery stalks, diced
- 2 tbsp extra virgin olive oil
- 1 tsp dried thyme (or 2 sprigs fresh thyme)
- 1 bay leaf
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat. Add chopped onions and sauté until translucent.
- Stir in minced garlic, diced carrots, and celery; cook until slightly softened.
- Add smoked paprika, followed by rinsed lentils and chopped tomatoes. Stir well.
- Pour in vegetable broth along with bay leaf and thyme. Bring to a boil then reduce heat to simmer for about 30 minutes.
- Once lentils are tender but not mushy, remove bay leaf and season with salt and pepper before serving.
