  • 1 cup green or brown lentils
  • 4 ripe tomatoes, chopped (or 1 can diced tomatoes)
  • 2 tsp smoked paprika
  • 4 cups low-sodium vegetable broth
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 tbsp extra virgin olive oil
  • 1 tsp dried thyme (or 2 sprigs fresh thyme)
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onions and sauté until translucent.
  2. Stir in minced garlic, diced carrots, and celery; cook until slightly softened.
  3. Add smoked paprika, followed by rinsed lentils and chopped tomatoes. Stir well.
  4. Pour in vegetable broth along with bay leaf and thyme. Bring to a boil then reduce heat to simmer for about 30 minutes.
  5. Once lentils are tender but not mushy, remove bay leaf and season with salt and pepper before serving.
