  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 2 cloves fresh garlic, minced
  • 2 medium carrots, sliced
  • 2 celery stalks, chopped
  • 2 cups fresh spinach
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 16 oz potato gnocchi (store-bought)
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add minced garlic, sliced carrots, and chopped celery. Sauté until softened, about 5 minutes.
  2. Add diced chicken breasts to the pot; season with salt, pepper, thyme, and parsley. Cook until browned on all sides (6-8 minutes).
  3. Pour in chicken broth while scraping the bottom of the pot. Bring to a simmer for about 5 minutes.
  4. Stir in gnocchi and cook according to package instructions until they float (3-4 minutes).
  5. Mix in heavy cream until well combined and simmer for an additional few minutes until creamy.
  6. Just before serving, stir in fresh spinach until wilted (about 1 minute). Serve hot.
