- 4 cups low-sodium chicken broth

- 16 oz potato gnocchi (store-bought)
- 2 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp dried parsley
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add minced garlic, sliced carrots, and chopped celery. Sauté until softened, about 5 minutes.
- Add diced chicken breasts to the pot; season with salt, pepper, thyme, and parsley. Cook until browned on all sides (6-8 minutes).
- Pour in chicken broth while scraping the bottom of the pot. Bring to a simmer for about 5 minutes.
- Stir in gnocchi and cook according to package instructions until they float (3-4 minutes).
- Mix in heavy cream until well combined and simmer for an additional few minutes until creamy.
- Just before serving, stir in fresh spinach until wilted (about 1 minute). Serve hot.
