  • 8 oz penne pasta
  • 1 cup canned pumpkin puree
  • 1 cup tomato sauce
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup mozzarella cheese, shredded
  • ½ cup parmesan cheese, grated
  • 2 cups fresh spinach
  • 2 tsp olive oil
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly spray a baking dish with nonstick cooking spray.
  2. Cook the penne pasta in boiling salted water until al dente; drain.
  3. In a skillet over medium heat, heat olive oil and sauté diced onion until translucent. Add minced garlic for the last minute.
  4. In a large bowl, mix pumpkin puree and tomato sauce; stir in sautéed onion, garlic, basil, oregano, salt, and pepper.
  5. Fold cooked pasta and spinach into the sauce mixture until well combined.
  6. Pour half of the mixture into the prepared baking dish. Layer half of the mozzarella and parmesan on top. Add the remaining pasta mixture and finish with more cheese.
  7. Bake uncovered for 25-30 minutes or until bubbly and golden brown.
