  • 1 lb beef chuck roast
  • 1 medium onion, chopped
  • 1 cup bell peppers (mixed colors), chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 8 oz cream cheese
  • 1 cup shredded provolone cheese

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onions and bell peppers until tender, about 5 minutes.
  2. Push veggies aside and add beef chuck roast; brown on all sides for about 8 minutes.
  3. Stir in minced garlic and cook for an additional minute.
  4. Pour in beef broth, scraping any browned bits from the bottom of the pot. Bring to a simmer, cover, and cook on low for about an hour until the beef is fork-tender.
  5. Remove beef, shred it with forks, and return to the pot along with cream cheese. Stir until creamy.
  6. Serve hot, garnished with shredded provolone cheese.
