- 2 cups fresh broccoli florets
- 2 medium Yukon Gold potatoes, peeled and diced (about 2 cups)
- 1 cup sharp cheddar cheese, shredded
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups low-sodium vegetable broth
- 1 cup heavy cream (or half-and-half)
- Salt and pepper to taste
- 2 tbsp butter or olive oil
Instructions
- Prep your ingredients by washing and chopping the broccoli and peeling and dicing the potatoes. Dice the onion and mince the garlic.
- In a large pot over medium heat, melt the butter or oil. Add the onion and sauté until translucent, about 5 minutes. Stir in garlic until fragrant.
- Add the diced potatoes and vegetable broth; bring to a boil. Reduce heat and simmer until potatoes are tender, about 15 minutes.
- Stir in broccoli florets and simmer for another 5 minutes until bright green. Use an immersion blender to puree until smooth.
- Return to low heat, stir in heavy cream and cheddar cheese until melted. Season with salt and pepper to taste.
