  • 8 oz penne pasta
  • 2 cups butternut squash, peeled and cubed
  • 1 lb Italian sausage (sweet or hot)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup freshly grated parmesan cheese
  • Salt and pepper to taste
  • 2 tsp Italian seasoning

Instructions

  1. Cook the penne according to package instructions until al dente. Drain and set aside.
  2. In a large skillet over medium heat, brown the sausage for 5-7 minutes until fully cooked. Remove from skillet.
  3. In the same skillet, sauté diced onion until translucent, then add minced garlic and cook for another minute.
  4. Add butternut squash, season with salt, pepper, and Italian seasoning; cook until softened (about 10 minutes).
  5. Pour in heavy cream and stir in cooked sausage and parmesan cheese until melted.
  6. Toss drained pasta with the sauce mixture to coat evenly before serving.
