  • 1 medium butternut squash (about 2 lbs), peeled and diced
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup full-fat coconut milk, unsweetened
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground cinnamon

Instructions

  1. Prepare the ingredients by peeling and dicing the butternut squash, chopping the onion, and mincing the garlic.
  2. In a large pot over medium heat, add olive oil. Once hot, sauté the onion until translucent (about 5 minutes). Add minced garlic and cook for another minute.
  3. Stir in the diced butternut squash along with salt, pepper, nutmeg, and cinnamon. Cook for about 10 minutes, stirring occasionally.
  4. Pour in vegetable broth to cover the veggies. Bring to a boil then reduce heat and simmer gently for about 20 minutes until squash is tender.
  5. Blend the soup using an immersion blender until smooth or to your desired texture.
  6. Stir in coconut milk and heat through gently without boiling. Adjust seasoning as needed before serving.
