  • 20 jumbo pasta shells
  • 2 cups shredded boneless, skinless chicken breasts
  • 1 cup chopped fresh spinach
  • 1 cup Alfredo sauce (store-bought or homemade)
  • 1 cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 2 tbsp butter (for sauce)
  • 1 cup heavy cream (for sauce)

Instructions

  1. Preheat oven to 375°F (190°C) and prepare a baking dish with nonstick spray.
  2. Boil salted water and cook pasta shells until al dente, about 8-10 minutes; drain carefully.
  3. In a bowl, combine shredded chicken, spinach, half of the mozzarella, garlic powder, salt, and pepper.
  4. Stuff each shell generously with the filling and arrange them upright in the prepared dish.
  5. In a saucepan over medium heat, melt butter; add heavy cream and stir until thickened for about three minutes. Mix in remaining mozzarella until melted.
  6. Pour half of the Alfredo sauce over the stuffed shells, top with remaining sauce and Parmesan cheese. Cover with foil and bake for 25-30 minutes until bubbly; uncover for the last five minutes to brown.
