  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 cup long-grain white rice
  • 3 tbsp low-sodium soy sauce
  • 1 tsp onion powder
  • Salt and pepper to taste

Instructions

  1. 1. Preheat your oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. 2. Season the chicken breasts with salt and pepper, then place them in the prepared baking dish.
  3. 3. In a bowl, whisk together heavy cream, chicken broth, soy sauce, garlic, onion powder, and any additional spices until smooth.
  4. 4. Pour the creamy mixture over the chicken and cover tightly with aluminum foil. Bake for 25 minutes.
