  • 1 lb white fish fillets (cod or haddock)
  • 1 cup all-purpose flour
  • 1 cup panko breadcrumbs
  • 2 large eggs
  • 2 medium russet potatoes, cut into fries
  • 2 tsp olive oil
  • Salt and pepper to taste
  • Lemon wedges for serving

Instructions

  1. Soak cut potatoes in cold water for 30 minutes to remove excess starch.
  2. Season fish fillets with salt and pepper.
  3. Set up a breading station with seasoned flour, beaten eggs, and panko breadcrumbs.
  4. Dredge each fillet in flour, dip in egg, then coat with breadcrumbs.
  5. Drain and pat dry soaked potatoes; toss with olive oil and season.
