Instructions
- Grate the zucchini and place it in a clean kitchen towel to squeeze out excess moisture.
- In a large bowl, mix the grated zucchini with feta cheese, parsley, minced garlic, lemon zest, eggs, flour, salt, and pepper until well combined.
- Heat olive oil in a skillet over medium heat.
- Drop spoonfuls of the mixture into the hot oil and flatten slightly with a spatula. Fry until golden brown on both sides (about 4 minutes per side).
