  • 1 cup freshly grated Parmesan cheese
  • 4 cloves fresh garlic, minced
  • 1 cup panko breadcrumbs
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 4 tbsp unsalted butter
  • 1 cup low-sodium chicken broth
  • 2 tbsp fresh lemon juice
  • 1 tsp dried Italian herbs

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In one bowl, mix panko breadcrumbs with grated Parmesan cheese. In another bowl, season the chicken with salt and pepper.
  3. Coat each chicken breast in the breadcrumb mixture, pressing down for an even layer.
  4. Heat olive oil in a skillet over medium heat; sear chicken until golden brown (about 4-5 minutes per side).
  5. Transfer seared chicken to the baking sheet and bake for 20 minutes or until fully cooked.
  6. In the same skillet, melt butter over low heat and sauté minced garlic until fragrant. Add chicken broth and lemon juice; simmer briefly before drizzling over crispy chicken.
