  • 1/2 cup unsalted butter (113g)
  • 2 tbsp olive oil (30ml)
  • 2 tbsp fresh rosemary, chopped (about 6g)
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the baby potatoes thoroughly and halve them if larger than golf balls.
  3. In a bowl, melt the unsalted butter with olive oil. Stir in chopped rosemary, salt, and pepper.
  4. Toss the potatoes in the buttery mixture until well-coated.
  5. Spread on a parchment-lined baking sheet and roast for 30-35 minutes until golden brown and crispy.
