  • 4 boneless, skinless chicken breasts
  • 3 tablespoons za’atar spice blend
  • 2 tablespoons extra virgin olive oil
  • 4 garlic cloves, minced
  • 1 cup brown or green lentils
  • 2 cups low-sodium vegetable broth
  • 1/4 cup fresh parsley, chopped
  • Zest and juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix za’atar, olive oil, minced garlic, salt, and pepper until creamy. Coat the chicken breasts in the mixture.
  3. Place the chicken on the baking sheet and bake for 25-30 minutes or until golden brown and cooked through (internal temperature of 165°F).
  4. Rinse lentils under cold water; combine with vegetable broth in a saucepan over medium heat. Bring to a simmer.
  5. Cover and reduce heat; cook for about 20-25 minutes until tender. Stir in lemon juice and zest.
  6. Serve crispy chicken atop warm lentils garnished with parsley.
