Description

  • 2 cups cauliflower florets
  • 1 cup halved cherry tomatoes
  • 1/2 cup thinly sliced red onion
  • 1/2 cup cooked crispy bacon bits (or turkey bacon)
  • 1/2 cup mayonnaise
  • 1/4 cup Greek yogurt
  • Salt and pepper to taste

Instructions

  1. Wash and dry broccoli and cauliflower; chop into bite-sized pieces.
  2. Halve the cherry tomatoes and thinly slice the red onion.
  3. Cook bacon in a skillet over medium heat until crispy (about 7-10 minutes). Drain on paper towels.
  4. In a bowl, mix mayonnaise and Greek yogurt; season with salt and pepper.
  5. In a large mixing bowl, combine broccoli, cauliflower, tomatoes, red onion, and bacon bits. Drizzle with dressing and toss until evenly coated.
  6. Chill in the refrigerator for at least one hour before serving.
