  • 1 lb lean ground turkey
  • 1 cup dried cranberries, chopped
  • 1 cup breadcrumbs
  • 1/2 cup onion, finely chopped
  • 1/2 cup celery, chopped
  • 1/2 cup low-sodium chicken broth
  • 2 tsp fresh thyme (or 1 tsp dried)
  • 2 tsp fresh sage (or 1 tsp dried)
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a skillet over medium heat, heat olive oil and sauté the onion and celery until soft (about 5 minutes).
  3. In a large bowl, combine ground turkey, sautéed vegetables, breadcrumbs, cranberries, herbs, and enough chicken broth to moisten without making it soupy.
  4. Form the mixture into golf ball-sized balls and place them on the prepared baking sheet.
  5. Bake for 25-30 minutes or until golden brown and cooked through.
  6. Let cool slightly before serving with your choice of sauce.
