Instructions
- Preheat oven to 425°F (220°C). Halve baby potatoes and mince garlic.
- Season steak generously with salt and pepper on both sides.
- Heat olive oil in a skillet over medium-high heat. Sear steak for 3-4 minutes per side until browned.
- Add butter and minced garlic to the skillet, basting the steak as it continues to cook for another 3-4 minutes.
- Toss halved potatoes with olive oil, salt, pepper, and optional herbs. Roast in the oven for 25-30 minutes until golden brown.
