- 8 oz rotini pasta
- 2 ears fresh corn
- 2 ripe avocados, diced
- 1 cup cherry tomatoes, halved
- 1/4 red onion, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 3 tbsp freshly squeezed lime juice
- 3 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Cook the rotini pasta in salted boiling water according to package instructions until al dente. Drain and rinse under cold water.
- Preheat the grill to medium-high heat and grill the corn for about 10 minutes until charred. Let cool before cutting off the kernels.
- While the corn cools, dice the avocados and halve the cherry tomatoes.
- In a small bowl, whisk together lime juice, olive oil, cilantro, salt, and pepper.
- In a large bowl, combine cooked pasta, grilled corn kernels, diced avocado, cherry tomatoes, and red onion. Pour dressing over the top and mix gently.
- Serve immediately or chill for later enjoyment.
