  • 1 medium onion, chopped
  • 2 bell peppers (1 red, 1 green), chopped
  • 3 cloves garlic, minced
  • 1 cup tomato sauce
  • 2 cups uncooked penne pasta
  • 1 cup shredded sharp cheddar cheese

Instructions

  1. Preheat oven to 375°F (190°C). Lightly coat a 9×9-inch baking dish with nonstick spray.
  2. In a large skillet over medium heat, brown the sausage until cooked through; drain excess fat.
  3. Add onion and bell peppers to the skillet; sauté for about 5 minutes until softened.
  4. Stir in garlic and cook for an additional minute; then pour in tomato sauce.
  5. In a large bowl, combine sausage mixture with uncooked pasta and half the cheddar cheese; mix well.
  6. Transfer to the prepared baking dish, top with remaining cheese, cover loosely with foil, and bake for 30 minutes. Remove foil and bake for another 10 minutes until bubbly.
