  • 1 whole chicken (34 lbs)
  • 1 cup fresh pomegranate seeds
  • 2 tablespoons sumac
  • 4 cloves garlic, minced
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • ¼ cup fresh herbs (parsley or cilantro), chopped

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken dry and season generously with salt and pepper inside and out.
  3. In a bowl, combine olive oil, minced garlic, sumac, and chopped herbs; rub mixture over the chicken.
  4. Stuff half the pomegranate seeds inside the cavity along with extra herbs.
  5. Place the chicken breast-side up in a roasting pan and roast for 1 to 1 hour 15 minutes until juices run clear.
