Ingredients

  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cups fresh romaine lettuce, chopped
  • 1/2 cup Caesar dressing
  • 1/2 cup grated Parmesan cheese
  • 4 large tortillas (flour or whole wheat)
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat a skillet over medium heat and drizzle olive oil. Season chicken breasts with salt and pepper. Cook for 6-7 minutes per side until golden brown and cooked through (internal temperature should reach 165°F). Remove from heat and let rest.
  2. While the chicken rests, wash and chop the romaine lettuce. Grate the Parmesan cheese.
  3. Slice the cooked chicken into strips. Lay a tortilla flat; layer with romaine, chicken strips, Caesar dressing, and Parmesan cheese.
  4. Fold in the sides of the tortilla, then roll tightly from the bottom up. Slice in half diagonally before serving.
