Ingredients
- 1 whole chicken (4–5 lbs)
- 2 organic lemons (zest and juice)
- 3 sprigs fresh thyme
- 3 sprigs fresh rosemary
- 4 cloves garlic (minced)
- 1/4 cup extra virgin olive oil
- Salt (to taste)
- Pepper (to taste)
Instructions
- Preheat oven to 425°F (220°C). Line a roasting pan with aluminum foil.
- Rinse the chicken under cold water and pat dry.
- In a bowl, mix olive oil, minced garlic, lemon zest, thyme, rosemary, salt, and pepper.
- Rub the marinade all over the chicken, including under the skin.
- Squeeze half a lemon inside the cavity and add lemon halves and rosemary sprigs.
- Roast for 1 hour and 15 minutes or until the internal temperature reaches 165°F (75°C). Baste halfway through.
