  • 1 whole chicken (45 lbs)
  • 2 organic lemons (zest and juice)
  • 3 sprigs fresh thyme
  • 3 sprigs fresh rosemary
  • 4 cloves garlic (minced)
  • 1/4 cup extra virgin olive oil
  • Salt (to taste)
  • Pepper (to taste)

Instructions

  1. Preheat oven to 425°F (220°C). Line a roasting pan with aluminum foil.
  2. Rinse the chicken under cold water and pat dry.
  3. In a bowl, mix olive oil, minced garlic, lemon zest, thyme, rosemary, salt, and pepper.
  4. Rub the marinade all over the chicken, including under the skin.
  5. Squeeze half a lemon inside the cavity and add lemon halves and rosemary sprigs.
  6. Roast for 1 hour and 15 minutes or until the internal temperature reaches 165°F (75°C). Baste halfway through.
  7. Let rest for 10-15 minutes before carving.
