  • 1214 lb whole turkey
  • 10 cloves fresh garlic, minced
  • 1/4 cup fresh rosemary, chopped
  • 1/4 cup fresh thyme, chopped
  • 1/4 cup fresh sage, chopped
  • 1/2 cup brown sugar
  • Zest of 1 lemon or orange
  • 1/4 cup olive oil
  • 2 cups low-sodium chicken broth
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. Rinse the turkey under cold water and pat dry. Remove giblets from the cavity.
  3. In a bowl, mix minced garlic, chopped herbs, brown sugar, olive oil, citrus zest, salt, and pepper.
  4. Rub the herb mixture generously over the turkey and inside the cavity.
  5. Pour chicken broth into the roasting pan.
  6. Place turkey in the oven and roast for 2-3 hours until the internal temperature reaches 165°F (74°C), basting every 30 minutes.
  7. In the last 30 minutes of roasting, brush more brown sugar glaze over the turkey.
  8. Remove from oven and let rest before carving.
