Ingredients

  • 4 salmon fillets (150g each)
  • 2 tablespoons extra virgin olive oil
  • 3 cloves fresh garlic, minced
  • ½ cup oil-packed sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1 cup coconut cream
  • 2 teaspoons Italian seasoning
  • 2 tablespoons freshly squeezed lemon juice

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Sear salmon fillets skin-side down for 4-5 minutes until golden brown; flip and cook for another 4-5 minutes. Remove from skillet.
  2. In the same skillet, add minced garlic and chopped sun-dried tomatoes; sauté for about 1 minute until fragrant.
  3. Pour in coconut cream and Italian seasoning; stir while bringing to a simmer to thicken.
  4. Add spinach and cook until wilted (about 2-3 minutes).
  5. Return salmon to the skillet and drizzle with lemon juice before serving.
