- 4 salmon fillets (150g each)
- 2 tablespoons extra virgin olive oil
- 3 cloves fresh garlic, minced
- ½ cup oil-packed sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 1 cup coconut cream
- 2 teaspoons Italian seasoning
- 2 tablespoons freshly squeezed lemon juice
Instructions
- Heat olive oil in a large skillet over medium-high heat. Sear salmon fillets skin-side down for 4-5 minutes until golden brown; flip and cook for another 4-5 minutes. Remove from skillet.
- In the same skillet, add minced garlic and chopped sun-dried tomatoes; sauté for about 1 minute until fragrant.
- Pour in coconut cream and Italian seasoning; stir while bringing to a simmer to thicken.
- Add spinach and cook until wilted (about 2-3 minutes).
- Return salmon to the skillet and drizzle with lemon juice before serving.
