  • 2 tbsp fresh lemon juice
  • Zest of 1 lemon
  • 1 cup powdered sugar
  • 2 tbsp fresh lemon juice

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream together softened butter and granulated sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition. Stir in lemon juice, zest, and shredded coconut until combined.
  4. In another bowl, whisk together flour and baking powder. Gradually add to wet ingredients until just combined.
  5. Drop dough onto prepared sheets about two inches apart. Bake for 12-15 minutes until edges are golden brown.
  6. While cooling on wire racks, whisk powdered sugar and lemon juice for glaze. Drizzle over cooled cookies.
