Ingredients

Scale
  • 2 ¾ cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 cup unsalted butter (room temperature)
  • 1 large egg
  • 2 tsp vanilla extract
  • 2 cups powdered sugar (for frosting)
  • Food coloring (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together the butter and sugar until light and fluffy (about 3 minutes). Add egg and vanilla; mix until combined.

  4. Scoop dough onto prepared baking sheets about two inches apart. Flatten slightly.
  5. Bake for 8-10 minutes or until edges are lightly golden; centers should remain soft.
  6. Allow cookies to cool completely before frosting with colored icing.
