  • 1 tsp baking powder
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups powdered sugar (for icing)
  • Food coloring (various colors)
  • Popsicle sticks

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together softened butter and sugar until light and fluffy.
  3. Beat in eggs one at a time along with vanilla extract.
  4. In another bowl, sift flour and baking powder together, then slowly add to the wet mixture until just combined.
  5. Chill the dough wrapped in plastic wrap for at least 30 minutes.
  6. Roll dough on a floured surface to about ¼ inch thick and cut out bunny shapes.
  7. Place cookies on a lined baking sheet and insert popsicle sticks before baking for 8-10 minutes until lightly golden.
  8. Allow cookies to cool completely before decorating with icing.
