Ingredients

Scale
  • 2 cups fresh green peas (or frozen)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 cups vegetable broth (low-sodium)
  • 1 tsp lemon zest
  • 1 cup coconut cream (or heavy cream)

  2. Add minced garlic and cook for another minute until fragrant.
  3. Stir in the peas and vegetable broth; bring to a gentle boil.
  4. Reduce heat and simmer for about 10 minutes, until peas are tender.
  5. Using an immersion blender, puree the soup until smooth or slightly chunky based on preference.

  7. Season with salt, pepper, and additional lemon juice if desired.
  8. Ladle into bowls and garnish with fresh mint leaves before serving.
