- 1 yellow bell pepper, diced
- 1 medium zucchini, sliced
- 1 large red onion, cut into wedges
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
- 1/4 cup tahini
- 1 clove garlic, minced
- 2 tbsp lemon juice
- Water as needed for consistency
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a large bowl, combine chickpeas, bell peppers, zucchini, and red onion. Drizzle with olive oil and season with salt and pepper.
- Spread the mixture evenly on the prepared baking sheet. Roast for 25-30 minutes until vegetables are tender and slightly caramelized, flipping halfway through.
- While the vegetables roast, mix tahini, minced garlic, lemon juice, and water in a bowl until smooth; adjust thickness as needed.
- Once roasted veggies have cooled slightly, assemble your bowls by layering them with chickpeas. Drizzle generously with tahini dressing before serving.
