Description

Protein Blueberry Muffins are a deliciously nutritious treat, combining fluffy texture with wholesome ingredients. Perfect for breakfast or a snack, they will energize your day!


Ingredients

  • 1 cup whole wheat flour
  • 1/2 cup protein powder
  • 1 tbsp baking powder
  • 1/4 tsp salt
  • 1 cup fresh blueberries
  • 1/2 cup Greek yogurt
  • 1/4 cup honey or maple syrup
  • 2 large eggs
  • 1/2 cup almond milk (or any milk)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin with liners or nonstick spray.
  2. In a large bowl, whisk together the whole wheat flour, protein powder, baking powder, and salt.
  3. In another bowl, combine Greek yogurt, honey (or maple syrup), eggs, and almond milk until smooth.
  4. Gently fold the wet mixture into the dry ingredients until just combined; be careful not to over-mix.
  5. Fold in the blueberries and fill each muffin cup about three-quarters full.
  6. Bake for 20-25 minutes or until golden brown and a toothpick inserted comes out clean.
