- 8 cups brioche bread, cubed
- 8 large eggs
- 2 cups milk (or heavy cream)
- 1 pound sausage (spicy or sweet)
- 1 cup Gruyère cheese, grated
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp fresh thyme or chives, chopped
Instructions
- Preheat the oven to 350°F (175°C) and grease a baking dish.
- In a skillet over medium heat, cook the sausage until browned (about 5-7 minutes).
- In a large bowl, whisk together eggs, milk, salt, and pepper. Fold in half of the Gruyère cheese and herbs.
- Layer half of the brioche cubes in the baking dish. Spoon half of the sausage mixture over them followed by half of the egg mixture. Repeat layers.
- Top with remaining cheese and bake for 45-50 minutes until puffed and golden brown.
