Ingredients

  • 1 package (3 oz) red gelatin (strawberry or raspberry)
  • 1 package (3 oz) white gelatin (coconut or vanilla)
  • 1 package (3 oz) blue gelatin (blue raspberry)
  • 1 cup boiling water
  • 1 cup cold water
  • ½ cup whipped cream
  • Fresh berries (raspberries or blueberries) for garnish

Instructions

  1. Prepare the red layer: Dissolve red gelatin in 1 cup boiling water, then mix in 1 cup cold water. Pour into clear cups, filling them about an inch high. Refrigerate for at least 2 hours to set.
  2. Create the white layer: Dissolve white gelatin in another cup of boiling water. Once slightly cooled, stir in whipped cream until smooth. Pour over the set red layer in each cup and refrigerate for another 2 hours.
  3. Finish with the blue layer: Repeat the process with blue gelatin, mixing it with boiling water and then cold water after cooling slightly. Once the white layer is firm, pour blue mixture over it in each cup and chill for at least 2 more hours.
  4. Serve chilled topped with whipped cream and fresh berries.
