  • 2 medium carrots, shredded
  • 1 tbsp fresh ginger, grated
  • 1 tsp ground turmeric
  • 2 cups low-sodium vegetable broth
  • 1 tbsp coconut oil (or olive oil)
  • Salt and pepper to taste
  • Fresh herbs (optional), for garnish

Instructions

  1. Rinse the basmati rice under cold water until the water runs clear.
  2. In a large pot, heat coconut oil over medium heat. Add grated ginger and sauté for about 1 minute until fragrant.
  3. Stir in shredded carrots and cook for an additional 3-4 minutes until softened.
  4. Add rinsed rice, turmeric, salt, and pepper; mix well to coat the rice.
  5. Pour in the vegetable broth and bring to a boil. Reduce heat to low, cover tightly, and simmer for 15-20 minutes until the liquid is absorbed.
  6. Remove from heat, let sit covered for another 5 minutes, then fluff with a fork before serving.
