- 3 cups cooked, diced boneless skinless chicken breasts
- 2 tsp Italian seasoning
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup freshly grated Parmesan cheese
- 2 tbsp olive oil
- 2 cloves garlic, minced
Instructions
- Preheat the oven to 375°F (190°C). Slice the tops off the bell peppers and remove seeds.
- In a skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant, then add cooked chicken and Italian seasoning. Stir in marinara sauce and simmer for 5 minutes.
- Stuff each pepper with the chicken mixture, topping with mozzarella and Parmesan.
- Place the stuffed peppers in a baking dish with water to keep them moist and cover with foil. Bake for 25-30 minutes, removing the foil for the last 10 minutes until cheese is bubbly and golden.
