  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup fresh parsley
  • 2 tbsp fresh oregano
  • 4 garlic cloves
  • 3 tbsp red wine vinegar
  • 1/3 cup extra virgin olive oil
  • Salt and pepper to taste
  • 1/2 cup mayonnaise
  • 2 tbsp freshly squeezed lemon juice

Instructions

  1. In a food processor, blend parsley, oregano, garlic, red wine vinegar, olive oil, salt, and pepper until smooth to create the chimichurri marinade.
  2. Marinate the chicken breasts in half of the chimichurri mixture for at least 30 minutes (preferably overnight).
  3. Preheat the grill to medium-high heat. Grill the marinated chicken for about 6-7 minutes on each side or until fully cooked (internal temperature should reach 165°F).
  4. While grilling, mix mayonnaise and lemon juice in a bowl; season with salt and pepper.
  5. Slice the grilled chicken and assemble bowls by layering quinoa or rice as the base. Top with grilled chicken strips, fresh veggies, chimichurri sauce, and garlic sauce.
