- 3 tbsp red wine vinegar
- 1/3 cup extra virgin olive oil
- Salt and pepper to taste
- 1/2 cup mayonnaise
- 2 tbsp freshly squeezed lemon juice
Instructions
- In a food processor, blend parsley, oregano, garlic, red wine vinegar, olive oil, salt, and pepper until smooth to create the chimichurri marinade.
- Marinate the chicken breasts in half of the chimichurri mixture for at least 30 minutes (preferably overnight).
- Preheat the grill to medium-high heat. Grill the marinated chicken for about 6-7 minutes on each side or until fully cooked (internal temperature should reach 165°F).
- While grilling, mix mayonnaise and lemon juice in a bowl; season with salt and pepper.
- Slice the grilled chicken and assemble bowls by layering quinoa or rice as the base. Top with grilled chicken strips, fresh veggies, chimichurri sauce, and garlic sauce.
